This year’s symposium will focus on culinary trends and techniques based around:
This day-long event begins at 8:30 AM with keynote speaker Chef Mario Morales Executive Chef for Groupon. Chef Morales has worked with some of the top chefs in Chicago and internationally. Prior to joining Groupon last year, Chef Mario served as Sous Chef at the Peninsula and Sofitel Hotels in Chicago and he was Chef de Partie at NoMi. At Groupon he effectively manages a staff of 15 that serves 1200 meals a day with a daily changing menu. In March he will graduate with a degree in management from Loyola University. After the keynote address, attendees will have the opportunity to participate in the following exciting sessions throughout the day: Adaptability, Creativity, Mobility, and Versatility.

Between the morning and afternoon sessions, lunch will be provided, prepared by the students of the Robert Morris University, Culinary Arts program.
Most of the sessions will include demonstrations and tastings. Throughout the day, attendees will be able to visit the Culinary Expo and Association Fair featuring representatives from all areas of the food industry and associations that support networking. Finally, the closing reception will include a drawing in the 8th floor auditorium.
